Eat your garden: Tomato sugo
1 kg (over)ripe tomatoes, roughly chopped
2 onions, sliced
4 cloves garlic, diced
olive oil (enough to coat ingredients)
salt and pepper (to taste)
dried herbs (eg. oregano, thyme)
fresh herbs (eg. basil)
Place all ingredients except the fresh herbs into a large roasting dish and combine, ensuring that the olive oil coats all ingredients. Bake in a moderate (180 degrees Celcius) oven for 1 hour. Let cool and add fresh herbs. Using a stick mixer or food processor, blend mixture until smooth.
Ladle mixture into container/s and freeze until ready to use.
