Eat your garden: German potato pancakes
‘Kartoffelpuffer’ (aka German Potato Pancakes)
1 lrg onion
1 Tbs plain flour
salt & pepper
Peel potatoes, grate potatoes and onion. Using a sieve and paper towel (or cheese cloth if you have it on hand) squeeze out as much of the liquid as possible. In a bowl, add eggs & flour to potato mixture, stir to combine. Season with salt & pepper. Heat oil in pan until hot but not smoking. Spoon batches of potato mixture into pan to resemble patties (approx. 2 Tbs mixture per patty), cook for 5mins each side or until golden brown. Transfer onto paper towel to remove excess oil and serve.
Serving suggestions: applesauce, quark, smoked salmon, plain(!)
