Eat your garden: Baby Spinach & Mushrooms

Sauteed baby spinach & mushrooms

olive oil
1 small onion, diced
3 cloves garlic, finely chopped
1kg mushrooms various (eg.  Portobello, Swiss Brown, Pearl Oyster), chopped into 1cm thick slices
4 C baby spinach, torn into large mouthful sizes
1/2 C basil, roughly torn in half
1/4 C parmesan cheese, freshly grated
salt & pepper to taste

Saute onion & garlic in saucepan in olive oil on medium high heat for 3 minutes until onion is translucent. Add mushrooms, stirring for 15mins or until they have shed most of their liquid. Add baby spinach and basil, stirring for 2 minutes until they have wilted. Season with salt & pepper. Transfer to serving dish & sprinkle parmesan cheese on top and serve immediately. Serves 8.
